Dairy Free Dessert – Lemon Blueberry Cheese Parfait

I’m so happy with this, everyone. When I tell you that this is one of the best desserts I’ve made, I mean it – a big hit with everyone who tried it. Dairy-free, grain-free, gluten-free and high in protein (20 grams per serving). It happens to be vegan (depending on what you think of honey), and absolutely delicious.

This dessert consists of three parts, crumb, filling and fruit topping. These little parfaits can be made ahead of time and will keep in the fridge for up to a week.

If macros are something you care about, each serving contains 24g of fat, 22g of carbs and 20g of protein. For plant-based desserts, that’s pretty amazing. I would serve this to anyone too, plant based or not.

Blueberry Lemon Cheese Parfait – a dairy-free dessert

Delicious cheese parfait without dairy, grains or gluten and 20 grams of protein per serving.

Portions: 4

For Mrvica

  • 1/2 cup almond flour
  • 1/2 cup hemp seeds
  • 1 tbsp date sugar or regular granulated sugar
  • 2 tbsp coconut oil

For fruit dressing

  • 1 a pint blueberries frozen blueberries work
  • 1/2 cup applesauce preferably unsweetened
  • 1 cup water
  • 2 tbsp med or agave nectar
  • 2 tsp fresh lemon juice just a squeeze
  • 1 pinch salt

For charging

  • 1 cup plant-based ricotta Brand Kite Hill
  • 2 cups vanilla-based yogurt Siggi’s brand
  • 1-2 scoops vanilla-based protein powder Lamb brand

Make a Crumb

  • Add all ingredients to a pan over medium-low heat and toast, stirring frequently to prevent burning. When golden brown and fragrant, remove from heat and set aside.

Make the fruit dressing

  • In a medium sauce pot, add all the ingredients for the fruit dressing. Bring to a boil over medium heat and reduce to syrup consistency. It should coat the back of the spoon. Refrigerate for 2 hours to chill or use an ice bath (put the mixture in a small glass bowl. place that bowl in a large bowl of ice water. stir constantly until cold).

Make a parfait

  • Arrange the parfaits in small jars or glasses, starting with the crumbs, then the filling, then the fruit dressing. Cover and chill in the refrigerator until ready to serve, or up to one week.
