Everyone, don’t you feel like they’ve been going back on heavy meals for the past 6 months? Not that it wasn’t fun, but my 40 year old digestive system just can’t hang on anymore. I find that if I make sure to get some sort of raw vegetable a few times a day, I feel a lot better and my body isn’t as irritated by the “indulgences” we all partake in. But can we do it while our taste buds still think we’re indulging?

Absolutely, and this salad is proof of that. Shredded cabbage, spicy sweet vinegar dressing with ginger and orange. Peanuts and herbs. It’s such a bright and “lively” dish, and it goes well with any protein you pair it with.

If the dressing comes to a boil first, we can use it to gently cook the cabbage and take out some of the acridity of the “raw cabbage”, while keeping the texture crisp and fresh.

Salad of chopped vegetables with sweet vinegar and orange
A quick salad that is ready in less than 10 minutes and is full of flavor.
For dressing up
- 1/2 cup sugar
- 1/4 cup water
- 1/4 cup distilled white vinegar
- 2 slices ginger root fresh – 1/4in x 2in long approx
- 1 tbsp orange peel
For the salad
- 1 a bag cabbage salad
- 1/2 cup chopped carrots
- 1 tbsp grated apples
- 1 fist cilantro leaves roughly chopped
- 1/3 cup peanuts shredded
- 1 tsp sesame oil

In a saucepan over medium heat, bring the dressing ingredients to a boil. Simmer for 3 minutes and remove from heat.

Mix the salad ingredients in a large bowl and pour the hot dressing over it. Toss to coat and let sit for a few minutes. Drain off excess dressing and serve.
